Tender red lentils and fine bulgur are combined with sautéed onions, tomato paste, scallions, and parsley, then shaped into decorative patties.

Steps
Cooking Lentils and Bulgur

For red lentil köfte in a lemon squeezer, first wash the red lentils, transfer them to a pot, and add enough water to cover.

Cook until tender. After cooking, add the fine bulgur and close the lid, keeping the heat turned off so that the bulgur swells with the heat of the lentils and the small amount of remaining water.
Sautéing Onions and Paste

Finely chop the onion and sauté thoroughly in the olive oil in a skillet. Add the tomato paste and sauté until its aroma is released.
Mixing the Köfte

Mix the prepared onion and tomato paste mixture with the lentil and bulgur base, and blend thoroughly.

Finely chop the scallions and parsley, then add them into the mixture and stir to combine.
Shaping and Serving

Add the seasonings. Moisten the inside of a lemon squeezer with cold water, fill it with the prepared köfte mixture, and shape.

Invert onto a serving platter and shake gently to release. Repeat this process until all the köfte mixture is finished, then serve.
