Prepare Chickpeas and Beef

For the chickpea stew with beef, soak 1.5 Turkish water glasses of chickpeas overnight. The next day, drain the water, add fresh clean water, and boil. Skim off the foam that forms on top, then drain through a strainer.

Place 350 g diced beef into a pot without adding oil. Cook uncovered until it releases and absorbs its juices. Once it absorbs its juices, add water up to its level and close the lid of your pressure cooker. If you do not have a pressure cooker, you can also cook it this way in a regular pot; the cooking time may take a bit longer.
Sauté and Stew

Once the meat is cooked, remove it from the pot. In the same pot, add 4 tablespoons of olive oil and 1 onion, then sauté thoroughly. Add 1.5 tablespoons of pepper paste and continue sautéing until fragrant.

Add the chickpeas, beef, and 1 teaspoon each of ground red pepper, cumin, and black pepper. Add water until it rises three finger-widths above the ingredients, and close the lid.

Cook for 20-30 minutes until the flavors meld. Then turn off the heat and serve piping hot.
