Steps
Prepare Meatball Mixture

For the beyti kebab, first process 1 onion, 1 egg, and 1 clove of garlic in a food processor.

Into a mixing bowl, add 400 g ground meat, 1/2 Turkish tea glass of breadcrumbs, 1/2 teaspoon black pepper, 1/2 teaspoon red pepper flakes, 1/2 teaspoon salt, and the mixture processed in the food processor.

Knead the mixture thoroughly.
Bake Meatballs

Line a baking sheet with parchment paper, shape the meatballs into long and flat shapes, and arrange them on the tray. Take care that the meatballs are not thick. Bake the meatballs in a preheated oven at 190 °C until browned on top.
Assemble and Bake Beyti

Once the meatballs are cooked, spread half a yufka onto the counter and brush 3 tablespoons of melted butter over it.

Arrange the cooked meatballs on the yufka leaving no gaps, then roll it up.

Slice the roll diagonally.

Brush butter over the yufka slices and return them to the oven.
Prepare Tomato Sauce

Meanwhile, start preparing the sauce for the beyti. Melt 2 tablespoons of butter in a skillet, add 1 Turkish water glass of grated tomatoes and 1 tablespoon tomato paste, and boil for a few minutes. Add 1 pinch each of black pepper and salt, then remove from the stovetop.
Finish and Serve

Remove the browned beyti rolls from the oven, pour the sauce over them, and serve with yogurt.
